Ingredients
- 8 jumbo shrimp (peeled and deveined)
- 8 large sea scallops
- 8 oz. grouper (cut into 4 2-oz. pieces)
- zest of 1 lemon
- 2 tbsp. chopped fresh flat Italian parsley
- 1 clove garlic (peeled and chopped or crushed)
- 1/4 c. olive oil
- 1 fl. oz. soy sauce
- 1/2 lb. arugula
- 6 8-fl. oz. mango vinaigrette
Preparation
Step 1
Combine lemon zest, parsley, garlic, olive oil and soy sauce in a mixing bowl, toss with shrimp, grouper and scallops and marinate in refrigerator for several hours. Pre-heat grill (or broiler) and grill to desired degrees of doneness. Arrange arugula on four individual plates or one large platter. Remove seafood from grill, place directly over the arugula and ladle mango vinaigrette over the seafood and arugula.
