Basic Baked Oatmeal

Ingredients

  • 2 cups old-fashioned oats
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup skim milk
  • 1/2 cup nonfat greek yogurt
  • 1 egg
  • 2 very ripe bananas, mashed
  • 1 tsp. maple extract (or vanilla)

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. In a large bowl, combine oats, baking powder, cinnamon and salt.

3. In a separate bowl, combine wet ingredients. Add to oat mixture. Stir until fully incorporated.

4. Coat an 8 x 8” pan with nonstick cooking spray. Pour mixture into pan, spreading evenly.

5. Bake for about 35-40 minutes or until golden and set.

*note – this baked oatmeal is not sweet despite the ripe banana. If you like a sweeter oatmeal, you can add 1/4- 1/3 cup brown sugar or a sweetener of your choice and/or diced fruits.
