Ingredients
- 3 Tbsp. apple jelly, warmed
- 1 Tbsp. fresh lemon juice
- 2 tsp. minced shallots
- Salt to taste
- 1 Tbsp. Dijon mustard
- 1 Tbsp. olive oil
- 8 slices baguette, bias-sliced, toasted
- 1 1⁄2 cups mesclun salad mix
- 2 cups sliced cooked chicken
- 1 Braeburn apple, thinly sliced
- Chopped fresh chives
Preparation
Step 1
Whisk jelly, lemon juice, shallots, and salt together in a bowl. In a second bowl, whisk Dijon and oil together.
Brush one side of each slice of toasted baguette with mustard mixture, then top with greens, chicken, and apple. Glaze with apple jelly mixture, then finish with chives.
