Creamy Green Beans and Mushrooms

  • 2 lb green beans trimmed
  • 2 T butter
  • 8 oz whole and/or baby portobella mushrooms, quartered
  • 2 shallots chopped
  • 2/3 cup half and half
  • 1 pkg 5.2 oz garlic and herb flavored spreadable cheese such as boursin
  • 2 T grated Parmesan cheese
  • 1 T chopped fresh thyme
  • 1/4 tsp pepper
  • 1 cup canned French fried onions



Step 1

In large pot of boiling salted water over medium high heat, cook green beans until just tender, 5 minutes, drain
meanwhile in large nonstick skillet, melt butter over medium high heat. add mushrooms and shallots, cook stirring occasionally until softened and golden 3-5 minutes. stir in beans remove from heat.
in microwave safe bowl, microwave half and half and spreadable cheese on high in 30 second intervals stirring until smooth. stir in parmesan, thyme and pepper. Transfer bean mixture to serving bowl, top with cheese mixture, sprinkle with onions
