Margarita Grilled Shrimp

  • 1/2 C FROZEN LIMEADE CONCENTRATE, THAWED
  • 1/4 C SNIPPED FRESH CILANTRO
  • 1 JALAPENO PEPPER, SEEDED AND FINELY CHOPPED
  • 2 CLOVES GARLIC, PRESSED
  • 1/2 t SALT
  • 1 WHOLE FRESH PINEAPPLE, CUT INTO /34" SLICES
  • 24 LARGE UNCOOKED SHRIMP, PEELED AND DEVEINED

Preparation

Step 1

PREPARE GRILL. COMBINE ALL EXCEPT PINEAPPLE AND SHRIMP. THREAD SHRIMP ONTO 4 SKEWERS. PLACE PINEAPPLE ON LIGHTLY GREASED GRILL. BRUSH WITH LIMEADE MIXTURE. GRILL COVERED 10-12 MINUTES, TURNING AND BASTING. REMOVE PINEAPPLE. PLACE SKEWERS ON GRILL. GRILL 3-4 MINUTES, TURNING AND BASTING UNTIL SHRIMP TURNS OPAQUE.
