Ingredients
- 1 tsp. baking soda
- 1/2 c. buttermilk
- 1 c. margarine
- 1 1/3 c. sugar
- 4 eggs
- 3 1/2 c. flour
- 2 tbsp. grated orange rind
- 1 can coconut
- 1 (8 oz.) pkg. dates chopped and rolled in sugar
- 2 c. pecans chopped
- 20 candied orange slices, cut in small pieces and rolled in sugar
- candied cherries pecan halves for garnish
Preparation
Step 1
Stir baking soda into buttermilk until dissolved. Cream margarine and sugar, adding eggs, one at a time. Add buttermilk mixture. Stir in flour, orange rind, coconut, dates, pecans and orange slices with large spoon. Bake at 300 degrees for 2 hours in angel food or tube cake pan that has been greased and floured. Just before cake is done, press candled cherries and pecan halves on top.
