Orange Slice Cake

Ingredients

  • 1 tsp. baking soda
  • 1/2 c. buttermilk
  • 1 c. margarine
  • 1 1/3 c. sugar
  • 4 eggs
  • 3 1/2 c. flour
  • 2 tbsp. grated orange rind
  • 1 can coconut
  • 1 (8 oz.) pkg. dates chopped and rolled in sugar
  • 2 c. pecans chopped
  • 20 candied orange slices, cut in small pieces and rolled in sugar
  • candied cherries pecan halves for garnish

Preparation

Step 1

Stir baking soda into buttermilk until dissolved. Cream margarine and sugar, adding eggs, one at a time. Add buttermilk mixture. Stir in flour, orange rind, coconut, dates, pecans and orange slices with large spoon. Bake at 300 degrees for 2 hours in angel food or tube cake pan that has been greased and floured. Just before cake is done, press candled cherries and pecan halves on top.
