Ingredients
- 6 boneless, skinless chicken breasts halves
- 1 egg
- 2 T water
- 1-1 1/2 c all-purp flour
- Veggie oil or peanut oil for deep frying
- 6 chicken boiling cubes
- 3 c water
- Dash pepper
- 4 T cornstarch
- 2 t oyster sauce
- 1 c sliced green onions
- 1 (7 oz.) package cashews
Preparation
Step 1
Cut chicken into 3/4 in. cubes. Beat together egg and water. Place 1 c flour in a shallow dish. Dip chicken cubes in egg mixture then roll in flour to coat well. Add additional flour as needed.
Fill deep fryer with oil and preheat, according to manufacturer's directions, until oil reaches 375 degrees. Deep fry chicken, in batches, 3-5 min. or until golden brown and meat is no longer pink. Place cooked chicken on paper towels to drain.
Meanwhile prepare sauce. Combine bouillon, 3 c water, pepper, cornstarch and oyster sauce in a saucepan. Heat over med-high heat, stirring constantly, until mixture thickens and just begins to boil.
Arrange fried chicken cubes in serving dish. Pour sauce over chicken. Sprinkle with green onions and cashews.
