This was my Mother's recipe. It comes out perfect all the time.

Ingredients

  • 1 cup of cornmeal
  • 1 cup of flour
  • 1 cup of milk plus 2 tbs.
  • 2 tbs. of oil
  • 1/2 cup sugar – I use a little less, because I do not like it too sweet.
  • 1/2 tp. Salt
  • 1 egg
  • 4 tsps. Baking powder
  • oil pan

Preparation

Step 1

Mix all ingredients together and blend well, but do not over mix. Bake at 350 degrees until golden brown on top and cake tester comes out clean, about 35 to 40 minutes.

I usually double the recipe and use buttermilk, because I think it tastes better. If you do not have buttermilk, you can put 1 tbs. vinegar to one cup milk. Do not over bake because it won’t be moist.
