Cheesy Penne with Beef Casserole

Ingredients

  • 8 oz penne
  • 2 Tbls. EVOO, divided
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 Lb. ground beef
  • 1/2 tsp. dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp. dried thyme
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup shredded reduced fat mozzarella cheese
  • 3 Tbls. grated Parmesan
  • 1/2 cup whole wheat panko bread crumbs

Preparation

Step 1

Preheat oven to 475. Coat a medium size baking dish with cooking spray.

Bring a large pot of lightly salted water to a boil, add the pasta and cook according to pkg. directions. Drain and set aside

Meanwhile, heat the oil over medium high in a large, nonstick skillet. Add the oinion and garlic and cook stirring 3 to 4 minutes until they start to soften. Add the beef, oregano, basil and thyme, cook, stirring to break up the crumbles, until the beef is no longer pink, 7 to 8 minutes. Stir in the tomatoes and simmer 5 minutes.

Combine the beef and pasta stir in the mozzarella and transfer to prepared baking dish. Combine Parmesan and bread crumbs in a small bowl sprinkle evenly over the casserole.

Bake 5 to 7 minutes, until top is golden. Makes 6 servings
