Key Lime Pie

Ingredients

  • Crust:
  • 6 Tbsp. butter melted
  • 1 1/2 c. graham cracker crumbs
  • Filling:
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1 1/2 tsp. grated lime peel
  • 1/2 c. Key lime juice
  • 1 c. heavy whipping cream
  • 2 Tbsp. sugar

Preparation

Step 1

Heat oven to 350. Have a 9" pie plate ready.

Crust:
Mix butter and cracker crumbs in a bowl. Press evenly over bottom and up sides of pie plate. Bake 8 min or until set. Cool completely on wire rack.

Filling:
Beat egg yolks in a medium bowl with mixer on medium speed until pale. Beat in remaining filling ingredients. Pour into crust. Bake 20-30 min until filling sets. Cool on wire rack, then refrigerate at least 4 hours.

Up to 2 hours before serving:
Beat cream and sugar in medium bowl with mixer on high speed until peaks form. Swirl on pie. Garnish with lime peel; refrigerate until serving.
