Ingredients

  • Crust:
  • 1 cup AP flour
  • 1/3 cup butter, softened
  • 1/4 cup powdered sugar
  • Topping:
  • 1 cup sugar
  • 2 eggs
  • 2 T. AP flour
  • 2 T. lemon juice
  • 1/2 t. lemon extract
  • 1/2 t. baking powder
  • 1/4 t. salt
  • Powdered sugar

Preparation

Step 1

Combine crust ingredients and pat into an 8” square baking pan. Bake at 375 degrees for 15 minutes. Meanwhile, for topping, combine sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust. Bake at 375 degrees for 18-22 minutes or until light golden brown. Cool. Dust with powdered sugar.
