Ingredients
- 2 (8 oz.) pkg. angel hair pasta
- 1/4 c. olive oil
- 1/2 onion, chopped
- 4 cloves garlic, minced
- 2 c. plum tomatoes, diced
- 2 tbsp. balsamic vinegar
- 1 (10.75 oz) can low sodium chicken broth
- Crushed red pepper flakes to taste
- 2 tbsp. chopped fresh basil
- 1/4 c. grated Parmesan cheese

Preparation
Step 1
1. Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 6 to 8 min. or until al dente; drain.
2. Pour the olive oil into a large deep skillet over high-heat. Saute onion and garlic until lightly browned. Reduce the heat to medium-high and add the tomatoes, vinegar, and chicken broth; simmer for about 8 min.
3. Stir in the red pepper, black pepper, basil and cooked pasta, tossing thoroughly with sauce. Simmer for about 5 min. and serve topped with grated Parmesan.
