Sweet Potato Soup - Vitamix

Ingredients

• 1/4 (43 g) small onion, peeled
• 1/2 Tablespoon olive oil
• 1 (270 g) sweet potato, baked
• 1/2 (75 g) apple, seeded
• 1 (70 g) carrot, halved
• 1 vegetable bouillon cube
• 1 1/2 cups (360 ml) water

Preparation

Step 1

Place all ingredients into the Vitamix container in the order listed and secure lid.

Blend for 5-6 minutes or until heavy steam escapes from the vented lid. Serve immediately.

This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
