pudding - dark chocolate gelatin pudding

Ingredients

  • 2 Tbsp Unflavored Gelatin
  • 1/2 cup water
  • 2 oz Unsweetened Dark Chocolate
  • 1 can coconut milk, (use canned, full fat)
  • 1/2 tsp ground nutmeg
  • 1/2 tsp cinnamon (optional)
  • 1 tsp vanilla,gluten free
  • 10-12 drops of liquid stevia
  • OR 1/4 cup maple syrup/honey

Preparation

Step 1

Melt the chocolate in a double boiler with the coconut milk and sweetener until melted and mixed thoroughly.

Remove from heat and mix in the vanilla, cinnamon and nutmeg.

Mix the gelatin with the water until dissolved.

Add the dissolved gelatin to the chocolate mixture and stir well.

Put the pudding into the refrigerator for one to two hours or until set and chilled.

If you are impatient put it in the freezer for about 30 minutes.
