Whole Wheat Blueberry Muffins

Ingredients

  • 1 1/2 cups flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/8 tsp nutmeg
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup canola oil
  • 2 cups fresh or frozen blueberries

Preparation

Step 1

In a lg bowl, combine the flours, sugar, baking powder, baking soda, salt and nutmeg. In another bowl, beat the eggs, buttermilk and oil. Stir into dry ingredients, just until moistened. Fold in blueberries.
Fill greased muffing cups 3/4 full. Bake at 375F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to cool completely.
