Triple Berry Bread Pudding

Lightened up version of bread pudding. Perfect dessert for using all those summer berries. This recipe works equally well with both fresh and frozen berries. Use whatever combination of berries you love. I've used strawberries, blueberries and raspberries (alone and combined) and it is equally good each way.

Ingredients

  • 2 cups skim milk
  • 8 oz. egg beaters
  • 2/3 cup sugar
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 2 cups mixed berries (any combo you love)
  • 8 slices whole wheat bread (torn in pieces)

Preparation

Step 1

* Preheat oven to 350*

* Mix first 5 ingredients in a 2 quart baking dish.

* Add bread and soak in egg mixture.

* Top with berries.

* Bake for 1 hour and 15 minutes.

* Serve warm with whipped topping.
