Strawberry Freezer Jam

Ingredients

  • 5 C Whole fresh strawberries, hulled
  • 4 C granulated sugar
  • 2 T lemon juice, fresh or bottled
  • 3 oz liquid pectin

Preparation

Step 1

mash strawberries to yield 1 3/4 cups. Combinne iwth sugar in bowl. Let stand 10 minutes.

Add lemon juice and pectin to fruit mixture. Stir continually for 3 minutes. Spoon into freezer containers. Allow 1 inch jead space for expansion when frozen. Cover with a tight fitting lid. Let stand for up to 24 hours at room temperature until set. Freeze. Refrigerate once opened.

Raspberry Freezer Jam: use 2 cups mashed raspberries instead of strawberries.
