Roasted Carrots

Ingredients
- 2 T canola oil
- 1 t chili powder
- 1 t cumin
- 1/2 t salt
- 2 lb carrots, cut into smaller pieces
- 2 T fresh cilantro
- 2 T lime juice
Details
Preparation
Step 1
Combine all ingredients from oil thru carrots in a plastic bag.
Mix thoroughly to coat carrots well.
Place on a cookie sheet with sides or shallow baking dish.
Roast in a 450 oven for 20 - 25 minutes.
When roasted, remove from oven and toss with cilantro and lime juice.
