Green Beans with Tomatoes

Alternative to the Thanksgiving Green Bean Casserole that my family will not eat.

Ingredients

  • 1 pkg whole green beans (frozen)
  • 1/4 c olive oil
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 clove garlic, minced
  • 1 t dried basil leaves
  • 1 t ground oregano
  • 1 T parsley
  • Salt and Pepper to taste
  • 1 T grated Parmesan cheese

Preparation

Step 1

Pour frozen green beans in a saucepan and cover with water.
Place uncovered saucepan on stove top and bring to a boil.
Boil for 3 minutes.
Drain.
Heat oil in a skillet, add beans and toss to coat with oil.
Add tomatoes, garlic, basil, oregano and parsley.
Cook mixture 5 to 10 minutes or until thoroughly heated.
Salt and pepper to taste.
Top with cheese.
