Potato Chip Cookies

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups potato chips, crushed
  • 1/2 cup chopped peanuts

Preparation

Step 1

Blend together shortening and sugars. Beat in eggs and vanilla; set aside. In a separate bowl, sift together flour baking soda and salt. Add flour mixture to shortening mixture. Mix well; stir in remaining ingredients. Drop by teaspoonfuls onto lightly greased baking sheets. Bake at 350 degrees for 10 to 12 minutes, until edges are golden. Let cool on baking sheets for 2 minutes; remove to a wire rack and cool completely
