Pumpkin Bread (a cake)

Ingredients

  • 2/3 C shortening
  • 2 2/3 brown sugar
  • 4 eggs
  • 16 oz. pumpkin
  • 2/3 C water
  • 3 1/3 C flour
  • 2 t baking soda
  • 1 1/2 t salt
  • 1/2 t baking powder
  • 1 t cinnamon
  • 1 t cloves
  • 2/3 to 1 C nuts, chopped
  • 2/3 to 1 C raisins

Preparation

Step 1

1. Cream shortening and sugar thoroughly. add eggs, pumpkin and water.Mix well.

2. Mix in dry ingredients, folding in nuts and raisins last.

3. Bake in 2 loaf pans 350 deg. 65 yo 75 mins. Test with toothpick for doneness.
