Whole-Wheat Pizza Dough

You can substitute all-purpose flour for the bread and/or whole-wheat flour, however the resulting crust will be a little less chewy.

Ingredients

  • 2-2/14 c bread flour
  • 2 c. whole-wheat flour
  • 1 envelope (2 1/4tsp) instant or rapid-rise yeast
  • 1 1/2 tsp salt
  • 3 tblsp olive oil
  • 1 1/2 c. warm wataer (110 degrees)

Preparation

Step 1

Pulse 2c. of the bread flour, whole-wheat flour, yeast and salt in a food processor to combine. With the procesor running, pour the oil, then the water, through the feed tube and porcess until a rough ball forms, 30-4- seconds.

Let the dough rest for 2 mintues, then process for 30 seconds longer. If the dough is stivky and clings to the blade, add the remaining 1/4 c. bread flour, 1 tblsp at a time, and pulse to incorporate.

Turn the dough out onto a lightly floured counter and knead it into a smooth round ball. Place the dough in a lartge, lightly greased bowl and cover with greased plastic wrap. Let rise in a warm palce until nearly doubled in size, 1-1/2 hours before using.
