Taco Chili

This is a pretty healthy taco chili. It is very filling and great for a cold night!

Ingredients

  • 3-4 Chicken Breasts (1.5 lbs)
  • 2 Tbsp Olive Oil
  • 1 Onion, diced
  • 2 16 oz. Cans Black Beans, Drained
  • 1 16 oz. Can White Corn, Drained
  • 1 16 oz. Can Tomato Sauce
  • 2 Cans of Rotel
  • 1 Package of Taco Seasoning

Preparation

Step 1

Season Chicken with your choice of seasoning and bake in oven for 30 min on 350. Let cool and dice up.
In pan heat olive oil and onions until onions are tender.
Add everything else to the pan and heat on low for 20 minutes.
Serve with sour cream, cheese, avocados on top (or your favorite toppings).
