Cheddar Cottage Pie

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 large carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1 lb lean ground beef
  • 1/2 tsp thyme
  • 1/4 tsp each salt and pepper
  • 2 tbsp tomatoe paste
  • 1 1/3 cup beef broth
  • 1 tbsp worcestershire sauce
  • Cheddar Mashed Potatoes
  • 2 lb potatoes
  • 1 cup milk
  • 1 cup cheddar cheese, shredded

Preparation

Step 1

1. Cook potatoes till tender. Drain and set aside
2. Heat milk to scalding and remove from heat. Add potatoes and mash until smooth stir in cheese.
3. In a large skillet, heat oil and cook onion, carrots and garlic stirring occasionally, until softened. About 5 minutes.
4. Add beef, thyme, salt, pepper and cook until meat is no longer pink. Stir in tomatoe paste.
5. Stir in broth and worcestershire sauce and bring to boil. Cover and reduce heat for 15 minutes.
6. Pour meat mixture into 1.5L dish. Top with potatoe mixture.
7. Bake in 400 degree oven for 20 minutes.
