Banana Muffins with Mascarpone Cream Frosting

Ingredients

  • Muffins:
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 2 c. sugar
  • 1 c. vegetable oil
  • 3 large eggs
  • 1 Tbsp. vanilla
  • 4 ripe bananas, peeled and coarsely mashed
  • Frosting:
  • 3 oz. cream cheese at room temp
  • 6 Tbsp. unsalted butter at room temp
  • 1/3 c. mascarpone cheese, at room temp
  • 3 Tbsp. honey
  • 1/2 c. chopped walnuts, toasted

Preparation

Step 1

Line 18 muffin cups with paper liners. Heat oven to 325.

Whisk the flour, baking soda, salt, baking powder, cinnamon and nutmeg to blend. Beat the sugar, oil, eggs and vanilla in large bowl to blend. Stir in bananas. Add the dry ingredients and stir just until blended.

Divide the batter among the prepared muffin cups. Bake on middle rack until tops are golden brown and a tester inserted into center comes out with no crumbs attached, about 25 min. Transfer the muffins to a rack and cool.

Frosting:
Using electric mixer beat cream cheese and butter in large bowl until light and fluffy. Beat in the mascarpone cheese and then beat in the honey. Spread the frosting over the muffins. Sprinkle with walnuts.
