Scotch Eggs (Carol's)

Ingredients

  • 4 eggs, hard-boiled and shelled
  • 1 pound sausage meat
  • 1 Tablespoon parsley, chopped
  • 1 onion, finely chopped
  • 1 egg, raw and beaten
  • flour for dredging
  • 1 cup bread crumbs
  • oil for frying

Preparation

Step 1

Beat the raw egg in a flat dish and set aside. Season the flour with a little S & P and place it in another flat dish or on waxed paper. Lay out the bread crumbs the same way.

Mix the sausage meat, parsley and onion. Divide the mixture into 4 equal parts. Flatten one part into a large round, and mold it around one of the hard-boiled eggs. Roll the ball in your hands until it is smooth-surfaced and egg-shaped. Roll it in the seasoned flour, dip in the beaten egg, and roll in the bread crumbs. Chill until serving time.

Heat the oil. Place the eggs into the hot oil, cook for about 10 minutes--turning--until all sides are golden brown. Drain on paper towels. Serve hot.
