Ingredients
- 3 TB olive oil
- 2 oz pancetta, finely diced
- 1/2 onion, finely diced
- 1 lb ground turkey
- 1/2 cup grated Romano cheese
- 1/4 cup chopped Italian parsley
- 1/4 cup breadcrumbs
- 1/4 cup chopped sun dried tomatoes
- 2 eggs, lightly beaten
- 3/4 tsp each salt and pepper
Preparation
Step 1
Preheat oven to 450.
Heat olive oil in a medium heavy skillet over medium heat. Add pancetta and cook for 2 minutes. Add onion and continue to cook until pancetta is crisp and onion is tender, about 4 minutes more. Remove from heat and let cool.
In a large bowl, combine pancetta mixture with the rest of the ingredients and stir to combine. Form into balls about 2 inches in diameter, using 2 TB for each. Place on a foil-lined sheet and bake for 20 minutes.
