- 3 Cups flour
- 1 Tablespoon Baking Powder
- 1/2 teaspoon Salt
- 250 grams Butter
- 2 Cups White Sugar
- 4 Eggs
- 45 ml Lemon Juice
- 1/2 teaspoon Vanilla Extract
- 250 ml Milk

Preparation
Step 1
Preheat oven to 160C/140C FF
Zest & juice lemons
Sift flour, baking powder & salt
Cream butter and sugar 3 - 5 mins
Add eggs 1 at a time, mix well between additions
Add zest, juice & vanilla
Add dry ingredients in 3 batches, alternating with milk.
Bake: Cupcakes 20 - 24 mins
