Malt Shop Cupcakes

Ingredients

  • 6 T butter
  • 1/3 c vegetable oil
  • 3/4 c water
  • 1 1/2 c flour
  • 1 1/2 c sugar
  • 1/2 c unsweetened cocoa powder
  • 1/2 c malted milk powder
  • 1 t baking soda
  • 1/4 t salt
  • 2 eggs
  • 1/3 c buttermilk
  • 1 1/2 t vanilla
  • frosting
  • 1/3 c softened butter
  • 3 T malted milk powder
  • 4 c powdered sugar
  • 4 to 4 1/2 T milk
  • 5 oz pkg of malted milk balls

Preparation

Step 1

Preheat oven to 350 and line 24 muffin pan with liners.

Heat butter, oil, and water in a small saucepan over medium heat just until butter is melted. set aside to cool slightly.

Stir together flour, sugar, cocoa powder, malted milk powder, baking soda and salt in a large bowl. Add butter mixture and beat until combined. Add eggs one at a time then stir in buttermilk and vanilla.

Pour batter into prepared muffin tins and bake for about 20 min or until toothpick comes out clean. Let cool completely before frosting.

Frosting
Beat softened butter until creamy. Beat in the malted milk powder then add the powdered sugar. Alternate it with the milk until mixture is smooth and spreadable. Set aside 24 malted milk balls for top of cupcakes. Smash the rest and stir into frosting.
