Charcoal Gril Roasted Bone in Pork Rib

Ingredients
- 1 4-5 pound center cut rib or blade end bone in pork roast
- 4 tsp kosher alt
- 1 3 inch wood chung
- pepper

Preparation
Step 1
Pat roast dry
Trim thick spots of surface fat
cut slits in surface fat layer, 1 inch apart, cross hatch pattern
Sprinkle with salt, wrap with plastic wrap and fridge 6-24 hours
1-2 hours before grilling, submerge wood in waater
Open bottom vents fully, laight, cover 1/3 of grill in stepped bank
Scrap grate clean
Sprinkle roast with pepper, place on grate with meat near but not over coals and bones facing away from coals
Open top vents halfway and cover grill, positioning vent over meat. Grill til 140, 1 1/4 - 1 1/2 hours
transfer, tent loosely and let rest 30 minutes.
