Ingredients

  • 1 lb. lean ground beef
  • 1 sm. onion, chopped
  • 1/2 c. sliced fresh mushrooms
  • 2 cloves garlic, minced
  • 1 pkg. (10oz) frozen chopped spinach, thawed & well drained
  • 1/2 tsp. ground nutmeg
  • 1 lb. russet potatoes, peeled, cooked, mashed
  • 1/4 c. sour cream
  • 1/4 c. milk
  • S&P
  • 1/2 c. (2oz) shredded cheddar cheese

Preparation

Step 1

Preheat oven to 400. Spray deep 9" casserole w/ nonstick cooking spray.

Brown beef in large nonstick skillet over med. heat 6-8 mins, stirring to break up meat; drain fat. Add onion, mushrooms & garlic; cook & stir till tender. Stir in spinach and nutmeg; cover & cook till heated through.

Combine potatoes, sour cream, milk. Add beef mixture; season to tast w/ S&P. Spoon into prepared casserole; sprinkle w/ cheese.

Bake 15-20 mins. or till slightly puffed and cheese is melted.
