Morning Mix Up

Ingredients

  • 2 c. frozen hash browns (use more)
  • 1 c. chopped fully cooked ham
  • 1/2 c. chopped onion (use more)
  • 2 Tbsp. vegetable oil
  • 6 eggs
  • salt and pepper to taste
  • 1 c. shredded cheddar cheese
  • Chives

Preparation

Step 1

In large skillet saute potatoes, ham and onion in oil for 10 min. or until potatoes are tender. In a small bowl beat eggs, salt and pepper. Add to the skillet; cook, stirring occasionally, until eggs are set. Remove from the heat and gently stir in cheese. Spoon onto serving platter and sprinkle with chives.
