Ingredients
- 4 lbs canned kidney beans
- 1 medium onion, chopped
- 2 stalks of celery, chopped
- 1 bell pepper, chopped
- 1 lb ham pieces
- 1 lb smoked sausage
- Salt
- Cayenne
- Tony Chachere's seasoning
Preparation
Step 1
Cut sausage into bite-size pieces and brown in a little oil. Remove to a plate; saute onion, celery and bell pepper in the same oil. Add sausage back to the pot; add all other ingredients.
Cover with water and bring to a boil. Reduce heat, cover, and cook for about an hour. Serve over rice.
