Beef and Noodles

Ingredients

  • 1 lb beef round steak or chuck steak, boneless & cut into cubes
  • 1/4 C all purpose flour
  • 1 TBL vegetable oil
  • 1/2 C onion, chopped
  • 2 garlic cloves, minced
  • 3 C beef broth
  • 1 tsp dried basil, crushed
  • black pepper to taste -
  • 1 C dry pasta noodles
  • 2 TBLS fresh parsley, snipped

Preparation

Step 1



Coat meat with flour. In large saucepan, brown half of the meat in hot oil. Remove from saucepan. Brown remaining with onion and garlic, adding more oil if necessary. Drain off fat. Return all meat to the saucepan.

Stir in broth, basil and pepper. Bring to boiling. Reduce heat. Simmer, covered, for 1 1/4 to 1 1/2 hours or until meat is tender.

Stir noodles into broth mixture. Bring to boil, reduce heat. Cook, uncovered, for 25 to 30 minutes or until noodles are tender. To serve, sprinkle with parsley.
