Spicy Lasagna Rollers

Ingredients
- 1 1/2 lbs. Italian sausage, casings removed
- 1 jar (28 oz) spaghetti sauce, divided
- 1 can (8 oz) tomato sauce
- 1/2 c. chopped roasted red pepper
- 3/4 tsp. Italian seasoning
- 1/2 tsp. red pepper flakes
- 1 container (15 oz) ricotta cheese
- 1 pkg. (10 oz) frozen chopped spinach, thawed & squeezed dry
- 2 c. (8 oz) shredded Italian cheese blend, divided
- 1 c. (4 oz) shredded cheddar cheese, divided
- 1 egg, lightly beaten
- 12 lasagna noodles, cooked & drained

Step 1
Preheat oven to 350. Spray 13 x 9 pan w/ nonstick cooking spray; set aside.
Brown sausage in large skillet over med. heat, stirring to break up meat; drain fat. Stir in 1/2 c. spaghetti sauce, tomato sauce, roasted red pepper, Italian seasoning, & pepper flakes
Combine ricotta, spinach, 1 1/2 c. cheese blend, 1/2 c. cheddar cheese & egg in med. bowl. Spread 1/4 c. ricotta mixture over each noodle. Top w/ 1/3 c. sausage mixture. Tightly roll up each noodle from short end, jelly-roll style. Place rolls, seam sides down, in prepared pan. Pour remaining spaghetti sauce over rolls. Sprinkle with remaining cheese.
Cover pan with foil; bake 30 mins. Remove foil; bake 15 min. or till bubbly.
