Green Chile Quesadillas

Ingredients

  • 2 c. shredded cheddar cheese
  • 1 can diced green chiles
  • 1/2 c. whole kernel corn
  • 1/4 c. sliced green onions
  • 10 fajita size flour tortillas
  • Salsa
  • Fresh cilantro

Preparation

Step 1

Combine cheese, chiles, corn and green onions in medium bowl. Spread 1/3 c. cheese mixture onto one half of each tortilla, fold tortilla in half.

Spray large skillet with Pam; place 2 quesadillas in skillet. Cook each side over medium high heat until golden brown and cheese is melted. Repeat with remaining ingredients. Cut each quesadilla in half. Serve with salsa and cilantro.
