Ingredients

  • 3 red Anjou pears
  • 1 T white balsamic vinegar
  • 1 t sugar
  • Prepare the Pear Vinaigrette. Recipe below.
  • 1 3oz package of prosciutto
  • 8 cups arugula and baby spinach
  • 4 oz Gorgonzola cheese, crumbled
  • 1/2 sweet and spicy pecans, chopped
  • 1/3 cup dried cranberries

Preparation

Step 1

Peel and core pears. Cut into bite-size pieces and place in a shallow bowl. Set aside 1/3 cup of pear pieces for the vinaigrette. Coat remaining pears with vinegar and sugar. This can be done 1 to 2 hrs in advance & refrigerated.


Pear Vinaigrette
Put 1 T. minced onion and 1/3 cup white balsamic vinegar in a small saucepan over medium heat and bring to a boil. Simmer 3 to 4 min to reduce. Add 1 t sugar, 1/3 cup chopped pears and the juice of half a lime. Cool.
Transfer to a blender jar and blend until smooth. Slowly add 1/3 cup olive oil through the lid until combined. Season to taste with salt.
