Thumbprint Cookies

Ingredients

  • 1/4 c crisco (1/2 c)
  • 1/4 c soft butter (1/2 c)
  • 1/4 c brown sugar (1/2 c)
  • 1 egg yolk (2)
  • 1/2 tsp vanilla (1 tsp)
  • 3/4 c chopped pecans (1 1/2 c)
  • 1 c flour (2 c)
  • 1/4 tsp salt (1/2 tsp)
  • 1 egg white (2)
  • frosting

Preparation

Step 1

Preheat oven to 375.
Mix together crisco, butter, brown sugar, egg yolk, and vanilla.
Prepare pecans.
Sift together and stir into batter: flour and salt.
Roll into balls the size of a walnut.
Beat slightly egg white with fork.
Roll balls in egg white then nuts.
Place 1" apart on greased baking sheet.
Bake for 5 minutes at 375.
Remove immediately and press thumb into each, gently.
Return to oven and continue baking 8 minutes.
When cookies are cool, frost with tinted confectioner's sugar frosting.
