Crunchy Walnut Cake

Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup sugar
  • 1/2 cup chopped walnuts
  • 1 Tablespoon unsweetened cocoa

Preparation

Step 1

1. Combine butter, sugar, egg and vanilla in a large bowl. Beat with electric mixer at medium/high speed until well blended.

2. Sift flour, baking powder, baking soda and salt together onto waxed paper. Lower mixer speed to very slow; add sifted dry ingredients, alternately with sour cream. Mix just until blended.

3. Spread half of the batter in a buttered 9" square baking pan. Combine remaining sugar, walnuts and cocoa; sprinkle half over the batter. Top with remaining batter, being careful to cover the filling. Sprinkle remaining sugar-walnut mixture over the top.

4. Bake in moderate oven (350 degrees) for 35 minutes, or until center of cake springs back when lightly pressed with finger. Cool in pan on wire rack. Cut into squares to serve.
