Marinated Vegetable Salad

Ingredients

  • 1 - 16oz can English peas, drained
  • 1 - 16oz can white shoe peg corn, drained
  • 1 - 16 oz can french style green beans, drained
  • 1 - 2oz jar diced pimento, drained
  • 1/2 c diced celery
  • 1 chopped green pepper
  • 1/2 c chopped onion
  • 1 c sugar
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/2 c vegetable oil
  • 3/4 c vinegar

Preparation

Step 1

Combine vegetables and toss to mix.
Combine last 5 ingredients in a sauce pan, bring to a boil, stirring occasionally until sugar is dissolved. Pour over vegetables. Cover and chill 24 hours.
