Sour Cream Raisin Bars

Ingredients

  • 2 C. raisins, cooked
  • 1 C. butter, softened
  • 1 C. brown sugar
  • 1 3/4 C. quick oatmeal
  • 1 3/4 C. flour
  • 1 tsp. baking soda
  • 3 egg yolks, beaten
  • 1 C. sugar
  • 12 oz. cultured sour cream
  • 2 1/2 Tbsp. cornstarch
  • 1 tsp. vanilla

Step 1

Cook raisins in 1 cup of water until soft, about 10 mins. Drain and set aside. Cream butter, and brown sugar. Add oatmeal, flour and baking soda. Mix well and put 1/2 of this mixture in the bottom of a 9x13 pan. Bake 5 mins. at 350. While crust is baking, combine beaten egg yolks, sugar, sour cream and cornstarch. Cook until thick, stirring constantly as this mixture burns very easily. Add raisins and vanilla to cooked mixture. Pour over baked crust. Crumble remaining dough on top and bake at 350 for 30 mins.
