Creamed New Potatoes with Peas and Onions

Ingredients

  • 12 small new potatoes ( 1 1/4 pounds)
  • 1 (10 ounce) package frozen peas
  • 3 tablespoons green onion, finely sliced
  • 1 tablespoon tub margarine
  • 1 tablespoon all-purpose flour
  • 1 cup skim milk
  • 1/4 teaspoon salt (optional)
  • 1/8 teaspoon white pepper
  • Dash of ground nutmeg

Preparation

Step 1

Cook potatoes in boiling water 15 to 20 minutes or until tender. Drain well. Place in serving dish and keep warm.

Cook peas and green onion in small amount of water, according to package directions, omitting salt. Drain and set aside.

Melt margarine in small heavy saucepan over low heat. Add flour stirring until smooth (mixture will be dry). Cook and stir constantly. Gradually add milk, stirring with a wire whisk until smooth; cook over medium heat, stirring constantly, until thickened and bubbly.

Stir in seasonings, peas and onion; cook until thoroughly heated. Pour creamed peas and onions over potatoes.
