Gazpacho

Ingredients

  • 1 green pepper, seeded
  • 1 whole onion
  • 1 whole cucumber, skinned
  • 2 cloves garlic
  • 3 stalks celery
  • 12 tomatoes
  • 3 Tablespoons olive oil
  • 2 Tablespoons vinegar
  • 1 Tablespoon lemon juice
  • 1 Tablespoon chives
  • 1 teaspoon salt
  • 1 can V-8

Preparation

Step 1

With food processor, puree onion and garlic, add celery, pepper, and cucumber. Wash and cut up the tomatoes, and in batches, puree them in processor, but not too finely--leave some lumps for texture. Add all together, and mix in with remaining ingredients. Chill, and let the flavors blend. Serve cold.
