Ingredients
- 1 pound shark or other fish steak
- 1/4 cup orange juice
- 1/4 cup soy sauce
- 2 tablespoons ketchup
- 2 tablespoons oil
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
- 1/2 teaspoon oregano
- 1 clove garlic, chopped
- 1/2 teaspoon pepper
Preparation
Step 1
1. Cut fish into serving size portions and place in a single layer in a shallow dish. Combine remaining ingredients, pour over fish and let stand for 30 minutes, turning fish once.
2. Remove fish, reserving sauce for basting. Place fish in a well greased, hinged wire basket. Cook about 4" from moderately hot coals for 8 minutes. Baste with sauce. Turn and cook 7 to 10 minutes longer, or until fish flakes easily when tested with a fork.
