Grandma's Prune Tarts

Ingredients

  • 2 1/2 cups flour
  • 1/8 tsp salt
  • 2 tsp baking powder
  • 1/2 lb margarine
  • 3 egg yolks
  • 1 envelope dry yeast
  • 3/4 cup lukewarm milk
  • 1 can prune filling (Solo brand for example)
  • Granulated sugar

Preparation

Step 1

Combine flour, salt and baking powder. With two forks or a pastry blender cut in margarine until the mixture is the texture of rice.

Dissolve yeast in lukewarm milk.

Add egg yolks and yeast/milk mixture to flour mixture. Blend until just moistened. Do not over work. Divide dough into 5 or 6 pieces. Place in bowl covered with a towel in refrigerator for 3 - 4 hours or overnight.

Sprinkle granulated sugar on floured board. Place 1 of the dough pieces onto the sugared and floured board and sprinkle with more sugar. Lightly work the sugar into the dough. Roll out 1/4" thick and cut into 2" squares. Slash 1" in on the diagonal of each corner leaving the center intact.

Fill with 1 tsp prune filling in center of square. Fold to make a pinwheel by folding every other edge towards the center of the cookie.

Place on an ungreased cookie sheet and bake at 375 degrees for 15 - 18 minutes. Remove from oven and place on wire rack to cool completely.
