Crispy Cinnamon Oatmeal Cookies

Ingredients

  • 3 &1/4 c. oatmeal (quick or old fashioned)
  • 1 stick butter
  • 1/2 c. shortening
  • 1/2 c. chopped pecans
  • 1 c. white sugar
  • 1 c. dark brown sugar, packed
  • 2 eggs
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 1 TB. cinnamon
  • 1 Tb. baking soda
  • 1 &1/2 c. flour (WW works well)

Preparation

Step 1

Combine all ingredients in large bowl & beat until it "balls up." Divide dough into 5 pieces & roll into logs, about 1.25 in. in diameter. Wrap in plastic wrap & freeze until ready to bake. Or if making right away, chill in refrigerator for a few hrs. or in freezer for 1 hr.
Preheat oven to 350 degrees. Slice chilled dough into 1/4-1/2 in. thick rounds. Place on greased or parchment-lined cookie sheets & bake 22-30 min. until brown & crispy.
