Ingredients
- 1.25 cups kosher salt
- 3.25 cups sugar
- 2 cups honey
- 6 sprigs each parsley, dill, thyme, tarragon & sage
- 2 sprigs rosemary
- 2 T mustard seeds
- 2 T fennel seeds
- 2 whole cinnamon sticks
- 5 bay leaves
- 8 whole cloves
- 1 T juniper berries
- 2 T whole black peppercorn
- 2 lemons, cut in half
- 1 T whole allspice
- 1 2-foot long Norway spruce branch (optional)
- 2 gallons of boiling water

Preparation
Step 1
Combine ingredients in large mixing bowl, pouring boiling water in last. Cool to room temperature. Add turkey, cover & refrigerate overnight.
