Ingredients

  • 1.25 cups kosher salt
  • 3.25 cups sugar
  • 2 cups honey
  • 6 sprigs each parsley, dill, thyme, tarragon & sage
  • 2 sprigs rosemary
  • 2 T mustard seeds
  • 2 T fennel seeds
  • 2 whole cinnamon sticks
  • 5 bay leaves
  • 8 whole cloves
  • 1 T juniper berries
  • 2 T whole black peppercorn
  • 2 lemons, cut in half
  • 1 T whole allspice
  • 1 2-foot long Norway spruce branch (optional)
  • 2 gallons of boiling water

Preparation

Step 1

Combine ingredients in large mixing bowl, pouring boiling water in last. Cool to room temperature. Add turkey, cover & refrigerate overnight.
