Chicken Thighs with Bacon and Sweet Potatoes

  • 3 Tbs flour
  • 4 tps coriander
  • 1/2 tsp thyme
  • 1/2 tsp sea salt
  • 1/2 tsp course black pepper
  • 1 1/2 lb chicken thighs
  • 4 slices bacon
  • 1 TBS olive oil
  • 1 large onion cut into chunks
  • 1 cup chicken broth
  • 1 large sweet potato peeled and cut into pieces
  • 1 medium zuccini cut in half moon circles
  • 1/2 cup orange juice

Step 1

Mix flour , coriander, thyme, sea salt, and pepper,in shallow dish coat chicken with mixture

reserve rest of flour mixture

cook bacon,in large dutch oven,drain on towel,slice bacon into 1/2 inch pieces, set aside,
reserve 2 tbls drippings in add oil, add chicken and brown it.

remove chicken from pot,

Stir onion into pot; cook about 4 min, Mix broth and reserved flour, add to pot, add sweet potatoes,
bring to a boil and add chicken back to pot, reduce heat and cook until sweet potatoes are tender. About 20 min.
Add zucchini and orange juice. Return to boil. Cover and simmer 5 min. or until chicken is cooked through and zucchini is tender. Sprinkle with bacon before serving.
