Garlic-Parmesan Orzo

Ingredients

  • 6 C water
  • 1 C orzo
  • 2 T olive oil
  • 1 T butter
  • 4 cloves garlic, finely chopped
  • 1/2 t grated lemon zest
  • 1/4 t red pepper flakes
  • 1/4 C finely chopped Italian parsley
  • 1/4 C fresh grated parmesan cheese

Preparation

Step 1

Bring water to a boil and add the orzo. Cook. stirring occasionally, about 8-10 minutes or until just tender.

While orzo is cooking, saute garlic in olive oil and butter in a medium skillet. Add the drained orzo, lemon zest, red pepper flakes, parsley and parmesan cheese. Toss well and serve immediately.
