Baked Onions with Gruyere Cheese

Ingredients

  • 5 med. sweet white onions
  • Salt & freshly ground pepper
  • 1 c. beef broth
  • 1 c. (about 4 oz) finely shredded gruyere cheese (NOTE: You may substitute same amount of swiss cheese)
  • 2 tsp. finely chopped fresh sage
  • 2 tsp. extra-virgin olive oil
  • 2 tsp. soy sauce

Preparation

Step 1

Preheat oven to 400 degrees. Coat large, shallow baking dish with cooking spray. Baking dish needs to be large enough to hold 10 onion halves. Trim about 1/4-inch off top and bottom of whole onions so halves will set flat on bottom. Cut onions in half cross-wise and then peel them. Arrange onion halves, cut side up in baking dish. Brush exposed tops with olive oil and sprinkle with salt & pepper. Bake about 35 minutes. Mix beef broth and soy sauce. Remove baking dish from oven and pour sauce over onions. return to oven and continue baking about 1 hour basting occasionally. If liquid evaporates, add a little water. Remove dish from oven & sprinkle sage then cheese evenly over onions. Bake 5-7 minutes more until cheese melts. Serves 10.
